Mussels Mooring's Style1/2 onion sliced 1 small bayleaf Put the onion, carrot, bayleaf, garlic, fish stock and wine into a large saucepan. Bring up to the boil and simmer for 5 minutes. Add the mussels to the pan, cover and cook over a high heat for 3-4 minutes until the mussels have opened. Discard any that remain closed. Add the cream to the pan and heat the sauce but do not boil. Taste, then season with salt and pepper. Serve with freshly baked Soda Brown Bread. Serves 4. Enjoy!
